OUR STORY

Katsu & Co. was born from a craving.

After years in Miami, our founder and chef, Pablo, missed the Japanese sandos he grew up with in São Paulo and rediscovered during his travels to Japan. Around the same time, Katty—born in Colombia and raised in Miami—was channeling her decade of hospitality experience and passion for bold flavors into shaping a new culinary venture.

 

Inspired by the beloved katsu sando, Pablo and Katty set out to bring this hidden gem to Miami. Using premium ingredients—like heritage pork, wagyu beef, and free-range chicken—paired with Japanese techniques, they craft sandos that are bold, comforting, and unforgettable.

 

More than just a sandwich, each sando is a bite of tradition reimagined: crispy cutlets, fluffy milk bread, and sauces that balance sweet, savory, and tangy notes.

 

At Katsu & Co., Pablo & Katty are proud to introduce Miami to authentic Japanese sandos, one joyful bite at a time.

About Pablo

Born in Brazil, I grew up in São Paulo—home to the largest Japanese community outside of Japan—where Japanese food and culture were part of everyday life. From an early age, I was immersed in my family’s businesses, helping out in their small bistros and prepared-food shops. By my teenage years, I was running my own food truck, serving burgers and learning the hustle of the culinary world firsthand.

 

When I moved to Miami long ago, I quickly noticed something missing: the vibrant Japanese street food I had grown up loving. On a recent trip back to Japan, I reconnected with the cuisine that has always inspired me, and that craving for authentic flavors sparked the idea for Katsu & Co.

 

Back in Miami, I saw the perfect opportunity to introduce something fresh. Japanese sandwiches—crispy, juicy, and packed with flavor—are still a hidden gem here. With Katsu & Co., I’m sharing those unforgettable bites and the same sense of discovery and delight that first inspired me.

About Katty

Born in Colombia and raised in the vibrant heart of Miami, Katty has watched this city grow into a true cultural powerhouse. For over a decade, she thrived in the service industry, mastering hospitality in fast-paced front-of-house roles—crafting cocktails, leading teams, and creating unforgettable guest experiences.

 

At home, Katty’s passion for cooking always shined through, as she loved transforming simple ingredients into bold, flavorful dishes.

 

Inspired by Miami’s late-night energy and the artistry of Japanese cuisine, she partnered to launch Katsu & Co. Together, the team brings crispy, flavor-packed Japanese sandos to Miami—blending tradition with a modern twist. Katty is proud to share this vision with the city she calls home, one bite at a time.
